A whole-food caramel substitute that is lick-your-spoon delicious! This recipe makes between 1½ and 1¾ cups.

Ingredients
1packed cup pitted dates(Medjool or Deglet Noor)
¼cupstirred almond or cashew butter
½cupunsweetened dairy-free milkplus more as needed
½teaspoonsea salt
Instructions
Add all ingredients to a high-speed blender and blend until completely smooth. Add more milk, 1-2 tablespoons at a time, to reach a thick but pourable/spreadable consistency. Transfer to a glass jar with a lid.
Keep in the fridge up for up to 5 days or freeze for up to a month.
Notes
If your dates are really dry, you can soak them for 15 to 30 minutes in warm water, drain and continue with the recipe as it's written.
