Salted Date Caramel

A whole-food caramel substitute that is lick-your-spoon delicious! This recipe makes between 1½ and 1¾ cups.

Equipment

  • BLENDER

Ingredients
  

  • 1 packed cup pitted dates (Medjool or Deglet Noor)
  • ¼ cup stirred almond or cashew butter
  • ½ cup unsweetened dairy-free milk plus more as needed
  • ½ teaspoon sea salt

Instructions
 

  • Add all ingredients to a high-speed blender and blend until completely smooth. Add more milk, 1-2 tablespoons at a time, to reach a thick but pourable/spreadable consistency. Transfer to a glass jar with a lid.
  • Keep in the fridge up for up to 5 days or freeze for up to a month.

Notes

If your dates are really dry, you can soak them for 15 to 30 minutes in warm water, drain and continue with the recipe as it's written.
