Ingredients
1cupdried apple slices
6medjool datespits removed
½cupraw cashews
¼cupraw walnuts
¼cupchia seeds
2tablespoonsmaple syrup *
1teaspooncinnamon
⅛teaspoonallspice
⅛teaspoonHimalayan salt
¼ - ½cupunsweetened toasted coconut
Instructions
Add all ingredients to a food processor (in the sequence listed) and process until the mixture rolls around the processor in a ball. Transfer the mix to a glass bowl.
Using a 1 tablespoon measuring spoon, measure out the dough and roll into a ball and then roll in toasted coconut. Place on a parchment lined baking sheet and place in the freezer for 30 minutes. Transfer to a freezer safe container and store the freezer or keep in the fridge for up to a week.
Notes
Sub in ¼ cup toasted coconut for the chia seeds if you don't have any. * You can omit the maple syrup and add 1-2 tablespoons of water instead if you want a no-sugar added version.
